Hey iam trying to convert my ecx torment into a brushless vehicle would this and a 6'800 kv brushless motor aswell as metal gears do the trick

Yes that would do it I would say the 6800kv would be to much I would stick with say a 4600kv that way it will not flip over as easy on power.

No you can use the stock steering servo for that.
